Abstract :
Project Motivation Infections caused by bacteria are among the leading causes of hospital deaths worldwide, and the search for antibacterial materials is of enormous importance. Traditional antibacterial materials contain heavy metals. Metals and toxic chemicals harm human and environmental health. Therefore, natural antibacterial substances, specifically antimicrobial polypeptides (AMP), have garnered significant attention recently. Nisin is an antimicrobial polypeptide produced by Lactococcus lactis subsp.lactis. The US Food and Drug Administration and the World Health Organization have accepted it as a food additive. Nisin has antimicrobial activity against a broad spectrum of gram-positive bacteria. Chitosan, a natural polysaccharide, plays a significant role in the biomedical field due to its low toxicity, high biodegradability, biocompatibility, and antimicrobial properties. In this research, nisin containing chitosan nanofibrous mats were produced using the electrospinning technique with optimized process parameters. The resultant nanofibers were assessed for morphology and diameter by scanning electron microscope (SEM), and their chemical structure and the presence of nisin were investigated using ATR-FTIR analysis. Antibacterial assays were performed against Staphylococcus aureus and Escherichia coli. Project goals: Production of nisin containing chitosan nanofibrous mat with optimized electrospinning parameters. Obtaining smooth, bead-free, and continuous chitosan nanofibers. Examination of the presence of nisin by ATR-FTIR analysis. Analysis of antibacterial properties of the nanofibers.
